Perfect Parfait   

This is great as a meal, snack, or dessert!

2 c. plain yogurt

1-2 Tbsp. pure maple syrup

2 medium fruits.  Apples are great for a ‘crunch’; cantaloupe, pomegranate, nectarines, and peaches are also good.

1 c. sweetened coconut, lightly toasted (optional: I tend to forget this every time and it turns out great).

Any combo of the following: toasted slivered almonds (the BEST), pecans, walnuts, and sunflower seeds.

Combine yogurt and maple syrup, set aside.  Divide 1/2 of the fruit among four parfait glasses.  Top each with 2 tablespoons of coconut.  Place close to ½ cup yogurt in each glass (reserving a dollop for the top).  Divide the remaining fruit among the glasses.  Garnish each glass with a dollop of yogurt, coconut, and/or toasted almonds. I usually layer plain yogurt with the fruit, then drizzle a little bit of syrup over the top, instead of pre-mixing the yogurt and syrup). 

This will satisfy a craving for something sweet every time!  My kids think the yogurt mixture tastes like whipped cream!

Serves 4
